INGREDIENTS
For the Lemon Zest Vanilla French Toast:
- 4 slices of brioche bread
- 2 large eggs
- ¼ cup half & half or milk
- 1 tsp vanilla extract
- ½ tsp lemon zest
- 1 tsp honey or agave syrup
- ½ tsp ground cinnamon
- Butter or coconut oil for cooking
For the Honey-Glazed Berries:
- 1 cup fresh strawberries
- 1 cup fresh blueberries
- 1 tbsp honey
- 1 tsp lemon curd
For the Scrambled Eggs:
- 4 large eggs
- ¼ cup half-and-half or heavy cream
- Salt and pepper to taste
- 1 tsp butter or olive oil for cooking
- Shredded cheddar or taco-mix cheese
SIDES (OPTIONAL)
- 1 yellow kiwi, peeled and sliced
- 1 small apple or peach, thinly sliced
- 4 strips of turkey bacon or traditional bacon (optional: low-sodium)
INSTRUCTIONS
Step 1: Prepare the Honey-Glazed Berries
- In a small pan over medium heat, combine berries, honey, and lemon curd.
- Stir gently and cook for 2-3 minutes until the berries are softened and slightly glazed.
- Remove from heat and set aside.
Step 2: Cook the French Toast
- In a bowl, whisk together eggs, milk, vanilla extract, lemon zest, cinnamon, and honey.
- Heat a non-stick pan over medium heat and add butter or coconut oil.
- Dip each slice of bread into the egg mixture, coating both sides and place in the pan.
- Cook for 2-3 minutes per side until golden brown. Keep warm.
Step 3: Make the Scrambled Eggs
- In a bowl, whisk together eggs, milk, salt, and pepper until well combined.
- Heat a non-stick skillet over low-medium heat and add butter or olive oil.
- Pour in the egg mixture and gently stir with a spatula until cooked.
- Remove from heat. Sprinkle cheese on top while still hot and stir in.
Step 4: Cook the Bacon (optional)
- Cook bacon in a skillet or oven until crispy. Drain on a paper towel.
Plating:
- Place two slices of French toast on each plate and top with honey-glazed berries.
- Add scrambled eggs and a side of bacon.
- Add slices of yellow kiwi and apples or peaches.
- Garnish with a dusting of powdered sugar (optional).
