MANGO-TANGO WAFFLES

INGREDIENTS
For the Waffles:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 2 tablespoons granulated sugar
- 2 large eggs
- 1¾ cups whole milk or half & half
- ½ cup unsalted butter, melted and cooled
- 1 teaspoon pure vanilla extract
For the Glazed Mangos:
- 1 ripe mango, peeled and sliced
- 1 tbsp unsalted butter
- 2 tbsp brown sugar (or honey for a lighter option)
- ½ tsp vanilla extract
- ¼ tsp ground cinnamon (optional)
For the Toppings:
- Raw sliced almonds
- Pecan or walnut bits
- Dried cranberries
- Powdered sugar, for dusting
INSTRUCTIONS
Step 1: Prepare the Glazed Mango
- Peel and slice the mangoes into thin strips or cubes, depending on your desired amount.
- In a medium-sized skillet, melt the butter over medium heat.
- Stir in the brown sugar (or honey) and cook until it begins to dissolve and bubble, forming a glaze.
- Stir in the vanilla extract and cinnamon (if using). Mix well to combine.
- Add the mango slices to the skillet, gently tossing them in the glaze. Cook for 2-3 minutes, until the mangoes are warm and coated in the glaze.
- Remove the skillet from heat and allow the mango slices to cool slightly before serving. The glaze will thicken as it cools.
Step 2: Prepare the Batter
- In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
Step 3: Preheat and Grease the Waffle Iron
- Preheat your waffle iron according to the manufacturer’s instructions.
- Lightly grease the waffle iron with cooking spray or a pastry brush dipped in oil.
