INGREDIENTS
For the Eggs
- 2 large eggs (or 3 egg whites for a lighter option)
- ½ cup fresh spinach leaves, chopped
- Shredded mozzarella
- 1 tablespoon heavy cream (optional, for fluffier eggs)
- 1 teaspoon olive oil or non-stick cooking spray
- Salt and pepper to taste
- Optional toppings: chopped chives, red pepper flakes, pico de gallo, crumbled queso fresco

- ½ small avocado, sliced
INSTRUCTIONS
Step 1: Prep the Ingredients:
- Chop the spinach and slice the avocado. Set aside.
Step 2: Whisk the Eggs:
- In a small bowl, whisk the eggs and heavy cream with a pinch of salt and pepper.
Step 3: Cook the Omelet:
- Heat the olive oil in a non-stick skillet over medium heat.
- Pour in the whisked eggs and let them cook undisturbed for about 1 minute, until the edges start to set.
- When the mixture is set and looks firm on the bottom, carefully flip over to the other side
- Sprinkle the chopped spinach and cheese evenly over one-half of the omelet.
Step 4: Fold and Finish:
- Use a spatula to fold the omelet in half, covering the spinach and cheese.
- Cook for another 1–2 minutes, until the cheese is melted and the eggs are cooked through.
Plate and Garnish:
- Transfer the omelet to a plate and arrange the avocado slices on the side.
- Garnish with optional toppings like chives, pico de gallo, crumbled queso, or red pepper flakes.
