BERRY BLISS TOAST

INGREDIENTS
For the French Toast Batter:
- 4 large eggs
- 1 cup heavy cream
- ⅓ cup sweetened condensed milk
- 2 tsp pure vanilla extract
- 1 tsp ground cinnamon
- Pinch of salt
- 8 slices of brioche bread
For the Triple Berry Compote:
- 1 cup fresh strawberries
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- ¼ cup sugar (or a natural sweetener like honey)
- ¼ cup water
- 1 tsp fresh lemon juice
For the Homemade Whipped Cream:
- ½ quart heavy whipping cream
- 2 tbsp of instant vanilla pudding mix
- ¼ powdered sugar
- ½ tsp pure vanilla extract
- Pinch of cinnamon (optional for warmth)

INSTRUCTIONS
Step 1: Prepare the Triple Berry Compote
- In a small saucepan, combine the berries, sugar, and water.
- Cook over medium heat, stirring occasionally, for about 8-10 minutes until the berries break down and the mixture thickens slightly.
- Add the lemon juice, stir, and set aside.
Step 2: Make the Whipped Cream
- In a chilled bowl, whisk heavy whipping cream, pudding mix, powdered sugar, and vanilla extract until mixture thickens and soft peaks form. Whisk until you achieve the preferred consistency. Refrigerate until serving.
Step 3: Prepare the French Toast Batter
- In a large bowl, whisk together eggs, heavy cream, sweetened condensed milk, vanilla extract, cinnamon, and salt.
Step 4: Cook the French Toast
- Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
- Dip each slice of brioche in the batter, ensuring both sides are coated but not soggy.
- Cook each slice for 2-3 minutes per side until golden brown. Keep warm.
Plating:
- Plate two slices of French toast per serving.
- Top with a generous dollop of whipped cream and a spoonful of warm berry compote.
- Serve with two sausage links and some fresh berries on the side.
- Garnish with a dusting of powdered sugar and a sprig of fresh mint (optional).
