CAJUN SALMON BITES

INGREDIENTS
For the Cajun Salmon Bites:
- 1 lb salmon fillet, skin removed, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- ½ tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp salt
- ¼ tsp black pepper
- Optional: Lemon wedges, for serving
For the Sweet Potato Mash:
- 3 medium sweet potatoes, peeled and cubed
- 1 tbsp butter
- Salt and pepper, to taste

INSTRUCTIONS
Step 1: Prepare the Sweet Potato Mash
- Bring a large pot of salted water to a boil. Add the cubed sweet potatoes and cook for 12-15 minutes, or until fork-tender.
- Drain the sweet potatoes and return them to the pot.
- Add or butter and a pinch of salt and pepper. Mash until smooth and creamy. Cover to keep warm.
Step 2: Cook the Cajun Salmon Bites
- In a medium bowl, toss the salmon cubes with olive oil, Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
- Heat a non-stick skillet or grill pan over medium-high heat. Add the salmon bites in a single layer and cook for 2-3 minutes per side, or until golden and cooked through. Avoid overcooking.
Plating
- Divide the sweet potato mash among 4 plates.
- Top with Cajun salmon bites and garnish with lemon wedges, if desired.
